Acrylamide is a carcinogen, producing tumors at multiple sites in rats and mice. Acrylamide has been listed under Proposition 65 since January 1, 1990. The general public is exposed primarily through certain foods that have been cooked at high-temperature, and through cigarette smoke. Plant based foods that are rich in carbohydrates and low in protein can form acrylamide when they are cooked at high temperature.
NOTICE OF WITHDRAWAL OF PROPOSED RULEMAKINGS -
ACRYLAMIDE NOTICE IS HEREBY GIVEN that pursuant to Government Code section 11347(a), the Office of Environmental Health Hazard Assessment (OEHHA) is withdrawing the three regulatory proposals listed above, which were submitted on April 8, 2005 to the Office of Administrative Law (OAL).

OEHHA is proposing three regulatory actions to provide compliance assistance to businesses subject to Proposition 65.
1) Updating the dose response assessment for acrylamide and proposing a revised no significant risk level (comment period extended to July 8, 2005)
2) Proposing an alternative risk level for acrylamide in breads and cereals (comment period extended to July 8, 2005)
3) Proposing warning language for acrylamide in food (comment period extended to July 8, 2005)

OEHHA has also scheduled a workshop (workshop agenda)* (workshop transcript) to explore additional regulatory actions regarding chemicals formed in food during cooking.
